Recipe:
Oven Baked Piri-Piri Chicken
Piri-piri is a traditional African chili
sauce. In this easy recipe its fiery taste is toned down with cotage
cheese and cream.
Serves 4 to 6
10 to 12 chicken pieces
Salt and pepper
1 tablespoon marjoram, freshly chopped
2 sprigs thyme
1 tablespoon piri-piri, or to taste, or your favourite chili sauce
250g savoury chunky cottage cheese
250ml cream
10ml mustard
60ml red wine
1. Preheat the oven to 180°C. Season
chicken pieces with salt and pepper and put in a ovenproof dish.
2. Sprinkle marjoram, thyme and piri-piri
over the chicken pieces. Mix the rest of the ingredients and pour over
the chicken.
3. Cover the dish with aluminum foil and
bake for 1 hour. For the last few minutes remove foil and brown
chicken pieces. Serve with brown rice and a crispy green salad. |
