Recipe: Colourful
Chicken Casserole

This chicken casserole is real comfort
food. It is one of our favourite chicken casseroles. Ideal for a mid
week family meal but equally suited for special guests.
Serves 4 - 6
1 tablespoon sunflower oil
- or home-made rosemary or tarragon oil
8 chicken-breast fillets
1 onion, sliced
2 cloves garlic, crushed
2 fresh sage leaves, optional
1 red pepper, thickly sliced
1 yellow pepper, thickly sliced
125 ml mayonnaise, preferably homemade
125 ml fruit chutney
50 ml fresh flat leaf parsley,
finely chopped
1. Heat the oil in a large frying pan. Brown the
chicken pieces on both sides. Remove the chicken from the pan and set
aside.
2. Add onion and
optional fresh sage leaves and sauté for one
minute, then add the garlic and cook 30 seconds. Remove from the heat.
3. Transfer the chicken pieces to an ovenproof
casserole dish. Add the pepper slices.
4. Mix the mayonnaise and chutney together and stir in
the onion mixture. Spoon over the chicken and peppers. Cover the dish
with a lid or aluminium foil and bake in a preheated oven for 20 to 25
minutes.
5. Remove from the oven and season with salt and
freshly ground black pepper. Sprinkle with parsley and serve with rice
or noodles. |
