Recipe:
Citrus Chicken Provençal
Don't be discouraged by the time
taken to complete this mouth-watering chicken dish - the delicious flavours will be just rewards, and it's fuss-free too.
Serves 4 - 6
4 chicken quarters
3 large oranges
12 garlic cloves
1 small chilli, deseeded and chopped (optional)
30 ml honey
4 rosemary sprigs
700g potatoes, skin on, diced
2 rashers bacon, chopped
15 ml olive oil
1. Put the chicken quarters, skin side
down, in a large ovenproof dish.
2. Halve 2 oranges, squeeze the juice
from them and pour into a bowl. Peel and crush 2 garlic cloves and
add, with the chilli and honey, to the orange juice, stir well. Pour
this mix over the chicken, cover and marinate for 2 hours, turning
twice.
3. Preheat the oven to 200°C. Turn the
chicken skin up, trim and scatter remaining garlic and rosemary. Add
the potatoes, bacon, remaining orange (sliced), and olive oil. Roast
for 45 minutes until golden brown. |
