Basic Coleslaw
This simple combination of cabbage and mayonnaise works best with a
real home-made mayonnaise. It is quick and thrifty to make. We often
use it as a quick toasted sandwich filling.
1 small head white cabbage, finely shredded
½ cup mayonnaise
½ teaspoon salt
1. Combine all ingredients thoroughly in a bowl.
2. Chill before serving.

Chef's Coleslaw
½ head white cabbage, finely shredded
1 onion, finely shredded
2 carrots, coarsely grated
½ cup mayonnaise (preferably home-made)
1. Combine all the ingredients in a bowl. Season, chill and serve.
New Good and Healthy Coleslaw
1 small head white cabbage, finely shredded
2 red green peppers, deseeded, cut into strips
1 bunch fresh flat-leaf parsley, finely chopped
5-6 tablespoons white wine vinegar
5-6 tablespoons vegetable oil
Salt
Freshly ground black pepper
1. Place the cabbage in a salad bowl, sprinkle with salt and toss
well.
2. Mix in peppers and parsley.
3. In a small bowl stir a little bit of ground pepper into the vinegar
and whisk in the oil. Pour over the salad, toss well, and let stand
for a while to blend the flavours.
Coleslaw with Beetroot and Yoghurt
2 cups white cabbage, finely shredded
3 medium beetroots, cooked, cut into small cubes
1 cup plain yoghurt
3 tablespoons flat-leaf parsley, finely chopped
1 tablespoon fresh horse-radish, grated
Salt and pepper to season
1. Mix cabbage, beetroot and parsley in salad bowl.
2. Pour yoghurt over top, add horseradish, and season with salt and
pepper.
3. Chill for 4 hours.
4. Toss before serving.
Quick and Thrifty Coleslaw
1 small firm white cabbage, finely shredded
2 carrots, grated
1 onion, finely sliced
1/3 cup mayonnaise
1/3 cup sour cream or plain yoghurt
2 tablespoons lemon juice
1/3 teaspoon salt
Pinch black pepper
1. Place the cabbage in a bowl and toss with the rest of the

Favourite Coleslaw

½ a white cabbage finely sliced
1 small red onion, finely sliced
3 carrots, thinly sliced
2 red apples, cored and thinly sliced
1 small bunch flat-leaf parsley, finely chopped
A couple of dollops mayonnaise
1 heaped teaspoon English mustard
Sea salt and freshly ground black pepper
1. Combine all the ingredients in a salad bowl.
2. Have a taste and add seasoning as needed.
KFC Coleslaw
The Colonel's Secret Recipe
8 cups finely diced cabbage (about 1 head)
¼ cup diced carrots
2 tablespoons minced onions
1/3 cup granulated sugar
¼ cup milk
½ cup mayonnaise
¼ cup buttermilk
1 ½ tablespoons white vinegar
2 ½ tablespoons lemon juice
½ teaspoon salt
1/8 teaspoon pepper
1. Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk,
vinegar and lemon juice and beat until smooth.
2. Add the cabbage, onios and carrots and mix well. Cover and
refrigerate for at least 2 hours before serving. |
