cover five subject areas
This is a practical
course. Even the 'theory' part of the course needs to be taken into
the kitchen and applied to your cooking. To bring this point home, we
do not present the material in one big course workbook. We present it
in subject specific mini-workbooks, and we call them mini-cookbooks,
not workbooks.
Culinary Arts -
In the five mini-cookbooks in this series we share the same cooking
skills that students learn in professional culinary schools
and how they can be applied to cooking for health and flavour. But we also go beyond that
with in-depth material about using herbs and spices to add flavour and
a healthy spin to your dishes.
Herb Profiles -
In each mini-cookbook in this series an individual
herb becomes your teacher. You'll discover
important principles of using herbs in general and you'll learn the
specifics of how and when to use the
specific herb: good herbal partners; matches made in heaven;
how to grow your own and how it can
add vitality to your diet.
The mini-cookbook also feature a collection
of recipes that showcase the many facets of using the herb
to create culinary masterpieces.
Pantry Products -
There is a whole range of products like seasoning salts, splash & dash
vinegars and herb infused oils that feature herbs and spices as a main
ingredient. These gourmet pantry products are typically found in the
deli-section of the supermarket and they bring a totally new dimension

cuisines. One is renowned for its use of herb and spices and the other
for helping cooks develop their savoir faire. They both add a
wonderful new dimension to your cooking. What's more, they are both
mother cuisines of true South African cuisine.

Choose a
Format to Suit You!
The unique mini-cookbook (mini-workbook) format allows us to offer
participants a full course or
modular format study option.
The full
course option
is for those who like a structured approach to learning and it
also offer
a substantial cost saving.
If you want to obtain the certificate you have to complete all five
modules within 25 weeks of enrolling.
The
modular study
option is ideal for those who cannot commit to a 25 week course,
preferring to order each of the five successive
modules as and when
they have time or the funds available. The biggest
disadvantage of this option is that it costs
slightly more than the full-time
option. If you want to obtain the certificate you
have to complete all five modules within one year of enrolling in the
the first module.
How much time do you need?
To get the most value
from this course plan to spend more time in the kitchen cooking with
herbs and spices, than sitting on the couch reading.
If you opt for the
full-time option you will be enrolled in the program for 25 weeks.
During this period you will receive five special emails with
instructions to download your five modules.
You will need to devote
an average of about 2 hours per week to this course. Fifteen to thirty
minutes reading through the mini-cookbook, selecting recipes, and
typing up and emailing your short assignment. And about one and a half
hours, doing what you do anyway, cooking for yourself and your guests.
(So there is no huge additional demand on your time.)
But here's the great
part. We know that you have other demands on your time and sometimes
things don't go as planned. Therefore every fifth week in the full
course option is a 'rest week' which gives you time to play
catch-up if you've fallen behind.

Even though this is a
home study course you will not be all on your own.
You get an experienced course facilitator, a real person with a
real love for cooking with herbs, who is only an email or phone call
away should you experience any problems with the program material.

What does it cost?
The full
course
participation fees, which include all twenty mini-cookbooks, delivered
in five modules of four

The part-time
facilitation fee amounts to R150 per module. Each
module consists of four mini-cookbooks.
